I’ve read about high heat grilling on the Big Green Egg but until tonight, I’ve never tried it before. I got the BGE up to about 625 degrees F. and tossed on the steaks. 3 minutes per side and they were done. I quickly took them off and wrapped them in foil. That was probably my mistake. They rested too long and while they were still pink in the middle, they were definitely not medium rare. I need to work on that.
